Remember that they'll keep a long time in the fridge, too. The eggs I bought today are dated March 18, and I'd expect them to be fine for a week or two past that . . . I can't say for sure, though, because they never last that long at my house. :-)

I knew you could use them for a while and they can even be tested by placing them in a cup of water. If they float they have too much air in the shell and need to be thrown away.
I was hoping they would keep for at least 6 months in my freezer. That way I won't have to buy eggs at the regular price for that long.

I didn't think you could - so thank you for teaching me. Can you freeze them after they are cooked?

You either need to cook them (scrambled, quiche, souffle etc.) or take them out of the shell, mix the white and yolk together or seperate yolks and whites. Place in a small container or zipped freezer bags. Thaw completely and stir before use in recipes.

They will last almost forever in the fridge if you will place a damp paper towel or small dish cloth in the container AND keep it damp with a spritz or two of water every few days or so (keeps the air sac from drying out). If you just have a few cartons - you can place them in the high humidity drawer. We have a small flock of chickens and that little trick gets us through the winter weeks when several of the girls decide to take vacation days.

    Enjoy!

Yes. I do it all of the time. Makes for easy breakfast prep on busy mornings.
