Pancake Question
I have a mega pancake recipe that calls for 10 2/3 cups of milk, 8 eggs & 1/4 cup of baking powder. My question is how badly would it affect the recipe if I were to cut back a little on these ingredients - 10 c. milk instead of 10 3/4, 4 eggs instead of 8, 1/8 cup of baking powder instead of 1/4? Has anyone cut back on their ingredients that they use in recipies w/o it affecting the taste or texture?

I think you could safely cut back on the milk if you subbed in another liquid, say water. Decreasing the baking powder might make flat pancakes. I'm not sure about the eggs.

If you cut any of the baking powder you will not have the same texture. Your soft fluffy pancakes wont fluff. And I wouldn't cut the eggs by more then one or two. As far as the milk goes you are you using whole milk or skim? If it's whole you can cut it with water.

Eggs add volume, texture, and richness. You can cut down an egg, but expect the cakes to be flatter, denser, and dryer. Eggs also work as a binder, so cutting too many eggs can mean that the cakes don't stick together as much as they should. Water can sub for milk, but again, milk adds richness. You might consider cutting milk with water or using dry milk. Don't decrease baking powder or baking soda. You need these to complete the chemical reaction for the batter rising.
I look at the eggs and milk as being the protein for breakfast, so I usually don't cut them, and if you divide the number of eggs by the number of servings, then you can see that it's fairly economical.Spiritual:

I'm using powdered milk which is 2%.
W/ the cost of groceries going up, I am trying so hard to find ways that I can cut back w/o sacrificing nutrition.

Definitely need to keep the baking powder. My crew isn't too picky. I usually cut the eggs called for in half. The pancakes are slightly less fluffy but not enough to keep people from eating them. I haven't experimented with milk so don't know what cutting it out would do, but replacing a little with water shouldn't hurt.

keep the powder if you like the fluffy cakes ... as far as the eggs/milk... use applesauce.

you can definately cut out an egg or two but that would be about it
