Question How long does Bulk Yeast Keep?

If I buy bulk yeast, how long will it last? Can you freeze it? If so, is there anything special you have to do after it has been frozen?

I bought a Costco size container of Yeast and have kept it in the freezer for over 3 years. It's in a freezer ziplock bag and I measure out what I need and use it straight from the freezer. I haven't noticed any problems with it at all. I usually make dinner rolls or cinnamon rolls not many loaves of bread any more and they rise and bake just fine.

I keep mine in the freezer too. I am using some that is dated June 2007 and it works fine still.

I teach at a cooking school for kids and we keep our yeast in the freezer in a glass canning jar. We use it straight from the freezer.

I would have never thought of freezing it! I bought some Monday now that I have a bread machine to use and put it in the fridge thinking that's what you were supposed to do. It'll be moving up in the world to the freezer once I get home.
