    Default Sweet Potato Wrap

    1) Peel the sweet potato and slice it into wedges

    2) Put sweet potato into dish with some water, cover, and microwave on high for 10 minutes, or until soft but still holding wedge shape

    3) Lay out wrap bread or tortilla. Squirt some balsamic glaze on the wrap. Add a few slices of sweet potato. Pile on some leafy greens and roll up the wrap!

    Might have to try this tomorrow..........have some pita bread to use up and bet that would work....also have some sweet potatoes to use up............YUM!!

    I usually get about 4 wraps out of one sweet potato. A little goes a long way! Definitely make sure to get feta or some other cheese in there (goat perhaps if it is on hand) to cut the sweetness.
