This recipe makes a big pan and can easily be halved. You can make it less spicy by using a mild taco mix and salsa. Also can be made ahead as long as you let the meat mixture cool down a bit before you put it all together. Just bake a little longer.
Taco Twist Casserole
2 lbs ground beef
1/2 green pepper, chopped
2 pkgs taco seasoning
28oz. can tomato sauce (may add more if it looks a little dry to you)
3/4 c salsa
16 oz. corkscrew macaroni, cooked & drained
2c shredded cheddar cheese, divided
1c sour cream
Cook beef and pepper til done, drain.
Add sauces and taco mixes , simmer on low 5 min.
In large pot you cooked pasta in (to save on dish washing,lol) mix pasta and sauce together, add 1 cup of cheese and all the sour cream.
Spray 13x9x2 pan (larger if you have it 17x ?) and pour mixture in . Top with remaining cheese and bake 350° for 30 min or until bubbly.
I like to add an 8oz can tomato sauce to top of casserole before I put cheese on if it looks a bit dry. Also put out a dish of sour cream at the table to put on your serving if you'd like. Kids love this stuff.

I am going to have to try this. My boyfriend likes anything with taco seasoning in it! His favorite is:
Coat two chicken breasts with taco seasoning and add about 1/2 cup fresh salsa on top of the chicken. Put into a dish and bake at 350 until cooked through. Top with cheddar cheese, and put back in oven until melted.
I think the dish is ok, but he loves it because of the taco seasoning.
