"Living More with Less" by Doris Jansen Longacre. I read this after I read her cookbook "More with Less" and I love it. The book was finished by others, as the author died with cancer before it was done.

I don't know if this actually counts as a simple living book but I love reading it and sometimes it really helps get me back on track when I start getting too materialist and need to get my values back in order. It is Walden (or Life in the Woods) by Henry David Thoreau.
