    Default Looking for small serving recipes...

    DS#1 lives on his own and my tennant will be moving out at the end of January (my choice) so it will just be me and the little one.
    Batch cooking and freezing really isn't going to work that great when we're only 1.5 people...I only want so many mini frozen broccoli & rice casseroles in my freezer LOL!!!

    Soooo I'm hoping someone here has come across a tasty website that is specifically for smaller "batch" cooking or small serving recipes.

    Taste of Home magazine used to make a Cooking for 2 magazine. I'm not sure if it's still in print, but many of the recipes are still available at Find Recipes, Appetizers, Desserts, Holiday Recipes & Healthy Cooking Tips, | Taste Of Home

    Something that helped me when hubby was in Iraq was to invest in smaller cookware. For instance, if all I had was a 9X13 casserole dish, I would make that big of a lasagna. When I invested in smaller casseroles, etc. I made smaller dishes.

    That was always helpful for me. I don't have any actual 'recipes' but we just learned to make things smaller scale.

    When I was making a stir-fry, I'd just use half the veggies and things required. Instead of making a full-size homemade pizza, we'd make English muffin pizzas. Every now and again, I'd bake a box of those instant scallop potatoes with chunks of ham in it. A lot of it, for us anyway, was trial and error.

    Check this book out of the library for inspiration"The Pleasures of Cooking for One" by Judith Jones. She's a very astute cook and gives great ideas for leftovers. Neighbor gave me the book and even tho I normally cook for more than one, I use this book a lot.

    I will cook for either one or up to four servings and freeze whatever is left over. Works great with macaroni and cheese, soup, fried rice, sauteed greens, roasted vegetables, etc. This seems to save alot of time when I need something quick to eat. Invest in some good single serving containers that you can freeze. It will save you money in the long run once you get a good selection of meals in your freezer.

    Whenever I purchase meat I divide it up in single servings and wrap then place in a plastic bag and freeze. At night I figure out what I am eating the next day. If I want a certain meat I just pull it out to defrost. I also like frozen veggies in the bag because I can heat something up quick to go with the meat. Any ground meat gets packaged up for one or two servings. That way I can either make hamburgers or a casserole knowing I will have enough for another serving. It really saves time if you have a hamburger already cooked that just needs to be reheated.

    Just make sure to get some masking tape and a permanent marker. Place a strip of masking tape on the container and with the marker write what is inside. It is amazing how everything starts looking the same in the freezer.
