Split Pea Soup (Weight Watchers points included)
Saute onion & garlic in oil. Be careful you don't burn the garlic.
Add other ingredients & bring to a boil. Cover pot, lower heat, and simmer for 2 hrs.
WW points: 3 per serving

I've been making this to go with my sandwich for lunch. It is surprisingly good for so few ingredients. I had no idea it was a weight watchers recipe.

In progress picture. This was taken halfway into the cooking time. I forgot to take one of the finished product. Oops. I'll be making more soon and will take one then.
You'll see that the peas haven't broken down entirely yet. When the soup is finished, you won't be able to see many peas--nearly all will have created a creamy consistency. I use big pieces of onion in my soups (and a lot of my cooking) so that the kids can pull them out.
Pea soup is never a pretty sight, but it sure is good
