White Chicken Chili
Recipe DescriptionThis is a WW recipe from their old Core program.Preparation Steps:Dice or shred cooked chicken OR cook chicken as directed below.Level of Difficulty:
Dice onion.EasyTime Needed:Ingredients:2 (15 oz.) cans of great white northern beansServes:
3 cups of cooked chicken, diced or shredded OR ~1 1/2 lb raw chicken
1 tsp. cumin
2 1/2 cups chicken broth
1 medium onions, diced (sauté to soften 1st)
1 (4 oz.) cans chopped green chilies
¾ tsp. ground oregano
¼ tsp. red or cayenne pepper
¼ tsp. pepper
Optional: 12 oz. light sour cream (CORE USE FAT FREE SOUR CREAM) **Don’t add in, just spoon on individual servings before eating.4-6Directions:Instructions
**If using cooked chicken, skip to step 4 and just add chicken to 5 c. chicken broth**
1. Fill a large sauce pan with 6 cups of water.
2. Place raw chicken in water and boil for 15-20 minutes.
3. Take chicken out of water and place in a glass dish. Allow to cool and then dice/shred.
4. To remaining water, add chicken bouillon (or if you like, throw this out and add 5 cups of chicken broth).
5. Add diced onion. Boil in broth for 15 minutes.
6. Add all remaining ingredients to pot, except sour cream; simmer one hour.
7. Fold in sour cream before serving. (sour cream is optional)

I'm making this for dinner tonight and am using black beans (no Northern beans on hand) and adding elbow macaroni to stretch it a bit.
