Stuffed Sweet Pepper Soup
Stuffed Sweet Pepper Soup
Recipe Descriptiona soup to use up extra peppers and much easier than stuffed peppersPreparation Steps:dice celery, onion, peppers; mince garlicLevel of Difficulty:EasyTime Needed:1 hour simmer timeIngredients:1 pound of ground beefServes:
2 quarts water
1 quart tomato juice
4 medium green peppers, diced
1-1/2 cups chili sauce
1 cup uncooked long grain rice
2 celery ribs, diced
1 large onion, diced
2 teaspoons browning sauce, ( optional)
3 chicken bouillon cubes
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper16 servings; 4 quartsDirections:In a large kettle or Dutch oven over medium heat, cook ground beef until no longer pink; drain. Add the remaining ingredients; bring to a boil. Reduce heat, simmer, uncovered, for 1 hour or until rice is tender.

Yum! We all love stuffed peppers so I have to make this. Nice for this weekend!
