Turkey Wing Soup with dumplings


Recipe Description
A turkey vegetable soup with some help from chicken stock! Served with parsley dumplings (separate recipe).
Preparation Steps:
Make broth/cook turkey, then make soup and dumplings the next day.

Ingredients:
1 pkg (2) turkey wings
chicken stock, 2C (?)
water, 4C(?)
celery 3 stalks
onions 2 med
carrot 2 med
salt & pepper (to taste)

Serves:
4 adult servings
Directions:
Put turkey wings in crockpot with 1 stalk of celery & 1 onion, chopped. Just cover with 1/2 water and 1/2 chicken stock or broth. Cook overnight or until meat falls off the bones. Cool, skim fat, remove bones, put meat into a separate bowl. Puree stock.

Put stock and meat back into a large stewpot or back in your crock if it's big enough (mine isn't!). Add the following large dice vegetables: 2 carrots, 2 stalks of celery, and 1 lg onion. Cook for 1 hour more or until veggies are all but done. Check for seasoning, add salt & pepper

Make dumpling recipe. Spoon dumplings atop the soup. Cook while simmering the soup, turn dumplings over so that they are cooked through.

When dishing up soup, it is usually easiest to put the dumplings in the bowls first.
