Chicken Lemon SoupChicken Lemon Soup
Recipe DescriptionDelicious soup that cheers you up with its bright flavors. I used leftover chicken and rice in it. This is from food.comPreparation Steps:Level of Difficulty:EasyTime Needed:45 minutesIngredients:1 onions, diced finelyServes:
1 1/2 carrots, diced finely
1 stalk celery, diced finely
1 teaspoon oil
zest of 1 lemon
1/2 cup long grain rice, uncooked
2 cups boneless skinless chicken breasts, cooked and diced
7 cups chicken broth
1 cup peas, frozen
1 1/2 tablespoons lemon juice
2 tablespoons parsley, fresh ( or 1 tbsp dried)
salt and pepper4Directions:Heat the oil and cook the onion, celery and carrot over medium heat until soft.
Add the lemon zest, rice and broth, bring to a boil, reduce heat and simmer, covered, for about 20 minutes until the veggies are tender.
Add the peas and lemon juice and simmer another 5 minutes. (If using dried parsley, add here).
Pour into bowls and top with chopped parsley.

Thanks.........this sounds good and I was just thinking that I might need a chicken from Costco............good recipe for the leftovers.

I made it with leftover chicken and leftover rice - wonderful way to use those up. Hope everyone enjoys it as much as we do!
