Andersen's Split Pea Soup - Copycat - Crockpot
Recipe DescriptionI love this soup - it's a little thinner than some split pea soups, but I like the flavor much better. I freeze leftovers.Preparation Steps:Level of Difficulty:EasyTime Needed:6-8 hoursIngredients:6 cups waterServes:
2 cups split peas, rinsed and picked over
1 stalk celery, coarsely chopped
1 large carrots, chopped
1 medium onions, chopped
1/4 teaspoon dried thyme
1 dash red pepper flakes
1 bay leaf
salt
pepper8 servingsDirections:1. Combine water, peas, celery, carrot, onion, thyme, red pepper and bay leaf in crock pot.
2. Season to taste with salt and pepper.
3, Cook on low until split peas and vegetables are tender (anywhere from 6-8 hours).
4. Press soup through fine sieve and reheat just to boiling point or use hand blender to puree.
