Here is a stuffed green peppers recipe I found.
3 green bell peppers
1lb. ground beef
2 tsp. unsalted margarine {divided use}
1/4 c. onion, chopped
3 Tbl. thick & chunky salsa
1 tsp. Mrs. Dash onion herb seasoning
2 c. cooked rice
1/2 c. water
1/2 c. soft white bread crumbs
1 tsp. poultry seasoning
1 tsp. paprika
1. Cut peppers in half. Remove seeds. Parboil 4 minutes.
2. In large frying pan cook beef. Remove meat and reserve. Discard pan drippings.
3. Saute onion in 1 tsp/ margarine until translucent. Add salsa, Mrs. Dash herb seasoning., cook rice & meat. Stir to combine.
4. Stuff green pepper halves with the meat & rice mixture & place into shallow baking pan. Add 1/2 water.
5. Combine bread crumbs, poultry seasoning & melted margarine. Sprinkle over stuffed peppers.
6. Cover & bake at 350* for 30 minutes. Uncover & bake for 5 minutes to brown.
Enjoy!
