storing cheese
couldn't go to sleep last so around 2 am i started my double boiler and my pot of wax and coated 20 lbs. of cheddar cheese to be put up -did 10 coatings and by the time i did the 20th it was time to start all over till i had 10 coats on all of them now when they get really good and dry i'll vacuum seal them to double preserve them---i'm tired now maybe ill be able to get some sleep-hugs to all fv---ps i also picked up 6 2 lb. boxes of velveta to store too hugs again

Have never heard of doing this. Always just threw a package of cheese in the freezer.

OOOO! I think I'd like to try that sometime!! Might be a fun way to present a cheese gift during the holidays, too! I LOVE to get a round of guoda with the red wax coating. I bet the cheddar will be great that way. Do you store in the fridge after it is all dry? How long will it keep?
