I got really sick a couple times on meat that was put on special because it was out of date. Blech.

I constantly keep an eye out in the meat department for managers specials. You can ask your meat department when they usually put them out during the month. I try to purchase as much as I can when I see them and know I will eat the type on sale.
It is nice being able to say, oh maybe I will have steak today, or maybe a nice pork chop. It is a little pricey at first but once you have a good stockpile going it is easy to keep up. Also, you may notice certain meats being cheaper at different times of the year. Right now I can buy boneless pork ribs really cheap. Just be sure to package/and label your meat for the freezer correctly so they keep a long time.

I buy a 1/4 cow about once every year and a half, and supplant that with various fowl throughout the year. That's primarily all the meat we cook regularly at home.
One thing I've found about stockpiling meat, I eat more of it if it is available. We've turned into one of those couples that designs our meals around the meat, which is something we are starting to reverse. Not that we have any qualms about eating meat with each meal, but it seems to limit our creativity.

I buy the chicken breasts when they are buy one get one free, then I get the cheapest chicken leg quarters and cut and repackage everything back up into 'whole cut up chickens'. The spare pieces get deboned for stir fry and the bones become broth. I can get 6 meals out of $15.

I'd be worried about losing power or the freezer breaking down. Happened to a friend of mine recently :-(

Ok, when I first read that, I thought you said you were making deer paws, and I thought, "wow! now THAT'S a level of frugality I don't think I can match!"

But then I re-read it, and I have it now, lol.
I love finding marked-down meat, but it seems to be out first thing in the morning when I'm normally at work. Sometimes I get lucky in the afternoon, though.

I love that list. I have been trying to do the same. It helps to look in the fridge and pantry and know you have enough food to eat.
