It was my first time and it was so simple! Basically you heat the jars in the oven at 250 degrees while the jars are in the oven slowly bring the butter to a boil and boil it for 5 minutes then fill the jars with butter and put the boiled lids and rings on the jars then let them sit on the counter to cool. You can hear them "pop" as they seal. (I love that sound!) After the first hour shake the jars every 15-20 minutes - this keeps the butter from separating as it cools. It took less than 1.5 hours to can 12 1/2 pints - not including the shaking of the jars until they cool. It was crazy - I shook the jars went back 15 minutes later to shake them again and the butter was hard. I used generic butter with salt. I had one jar a little short so next time I will use 4.5#.

Here is the web site: How to Can Butter in a Jar | eHow.com

    Good luck and enjoy!!
