Thanksgiving Recipe of the Day-Dried Fruit Stuffing
These recipes are from "Simple Pleasures for the Holidays". They are not tried and true by me, but thought they would be neat to add to a Thanksgiving thread.
Dried Fruit Stuffing
1 lb Italian sausage, casing removed
1/2 pound bacon cut into 1/2 inch pieces
1/4 cup butter
3 large leeks, sliced (white and green parts only)
1 large onion, diced
2 carrots, diced
3 large stalks celery with leaves, diced
2 cups dried prunes, chopped
1 cup dried apricots, chopped
2 Tbsp dried thyme
14 ounces brown bread, cut into 1/2 inch cubes and baked at 350 degrees for 15 minutes
1 1/3 cup turkey or chicken broth
3 eggs, beaten
In a large frying pan, cook the sausage and bacon until slightly golden, stirring frequently. Remove with a slotted spoon. Drain the remaining fat and add butter to the pan. Saute the leeks, onions, carrots, and celery until soft. Remove from heat, stir in the dried fruit and thyme. Add the bread cubes, broth, eggs, sausage, and bacon, stir well. Turn into a large baking dish, cover and bake at 350 degrees for 45 minutes. Remove cover and bake for another 15 minutes. Makes 14 servings.
