It was VERY good! This was at my MIL's (although I am southern born and bred) and she requests all healthy foods (she is a very strict eater and fat hurts her tummy). So I miss out on the 75 casseroles we get at a down home southern thanksgiving. =D Ohhhh... and ham. I miss ham. =|

Yes they are. A few times a year I make them. Here is a few weeks I am going to make some more to give to the neighbors. Last years I made them in the shapes of snowflakes this year I just got a cookie cutter shaped like a mitten and a gingerbread person.

I have tried a few. Let me say I don't know if I have found the best one yet. They taste good for sure though. Some say to chill the dough, the last one I used did. The one I tried before said not to.
This last batch seemed a little hard to roll out more than enough to cut out one or two cookies at a time.
1 1/3 cups unsalted butter (3sticks)
1 cup sugar
1 large egg
2 tsp vanilla
4 1/2 cups all-purpose flour
1/2 tsp salt
In a bowl with mixer on meduim beat butter and sugar untill fluffy. beat in egg and vanilla on low beat in flour and salt
Divide dough in half shape each half into a 1/2 inch thick disc. wrap in plastic wrap. chill until firm about 30 minutes
Heat oven 350 On floured surface roll dough 1/8 in thick. Transfer to ungreased cookie sheet and bake 10 minutes till lightly golden.
The frosting is Royal icing
1 1lb box of confectioners sugar
3tbsp powdered egg whites like Just whites or Meringue powder
6 tbsp warm water. (I use a bit more I like the frosting to be a little more moveable, it might take a few minutes more to dry but not much. You can tint the frosting any color you want.Married 22 years to Mark
