Have you noticed that you eat a lot differently now?
As opposed to when your kids were at home? We are eating a lot of easy to prepare foods now and sometimes that includes cereal for supper. Man I love that! Grapenuts with strawberries & blueberries makes a pretty tasty, easy to fix meal. What's your fav. no cook meal now that your nest is empty?

Seems like I'm always cooking even though I'm by myself. I don't eat cereal because it triggers something inside of me and I end up wanting to eat 3 huge bowls full of it. But my fav quickie meal would have to a fried bologna sandwich or a fried egg w/cheese sandwich.

Well, I do cook every day so that hubby has lunch the next day. He's not a fast food fan at all, and it does save money when he takes his lunch or supper depending on what shift he works. Most of our quickie meals are prepared from leftovers too. A roasted chicken, roast beef, ham, or meatloaf sandwich with a bowl of soup, or I make a layered cold salad with leftover meats sometimes. Since we always have fresh seafood in the freezer, I usually cook enough fish, shrimp or oysters to make a salad or a sandwich the next day too. I always try to keep a pot of rice in the fridge to make quick stir frys or we love egg fried rice too. I fry some bacon until crisp, drain all but a tablespoon or two of the drippings, add the rice and fry until warmed, and then add beaten eggs and stir until rice is coated with egg and cook until eggs are set. I serve with the crisp bacon and split toasted biscuits with honey or preserves. It's cheap, filling and very tasty. Every time my daughter has friends over, they ask for it too! LOL

No cereal at any meal unless it's a hot cereal for breakfast. We eat lots less meat and tons more veggies when the kids aren't home. Also do more experimenting with recipes. I like cooking so I'm having a good time.

I also like knowing who's going to be here & at what time lol. Took me a while to learn to cook for just 2 but I find I'm really liking it.~*Darlene*~

My hubby would never eat cold cereal for supper. LOL, I can barely get him to eat it for breakfast.

On a slightly different note, I certainly eat a lot differently since I moved.
likes almost all of the same foods as I do, and is willing to try my "weird" vegetarian stuff (he even likes a bit of it!
). I am definitely eating much healthier and better and it certainly feels great.

The best I can do when the kids are not here is to get DH to make us some omelets.
My DH still eats like a horse. Ever since he stopped the chemo he can't stop eating. I guess he has been making up for lost time this past year and is getting quite the belly on him. And I like it after looking at his ribs for the two years he was on the chemotherapy.

poached eggs and toast, or tuna on triscuits. Hubby still likes a hot meal but he is gone 2 nights a week for work.
