    Darlene.... care to share your Minted Zucchini Salad recipe?


    We're having BBQ pulled pork sandwiches on homemade hamburger buns (only been out of oven for 20 minutes so they're still warm) and Mixed Bean Salad. There will be lots of leftovers....YAY!!

    Here you go Kim, I sliced the zuccini instead of chopping, added s&p, garlic and only added a little parsley (thought it was way too much) also omitted the tomatoes because I didn't have any ripe enough. It was a light refreshing way to eat zucchini.Think marinated cucumbers with a minty taste,lol.
    We have lots of mint so I enjoy finding recipes that use it.

    It's funny you should ask. I really don't have a recipe. It started out as a huge pork butt roast slow-cooked in the crockpot all day on Tuesday, but then we were invited out to Chinese buffet that nite, so of course Chinese food won. So DBF put crockpot crock with the meat and juices ... everything ... UGH ... into the refrigerator and it mulled there for a few days 'cuz I was 'lazy' and we picked off the roast for lunches and stuff. So Friday morning I thought I should use it up before it went bad on me, so i let the crockpot insert set on the counter to come to room temp because I was afraid it was going to explode on me if I put it right into the heating thingy. Then I put the insert in and turned it to HIGH and cooked it for about 2 hours. It was already falling on off the bone. I removed the bone, drained most of the juices/broth stuff out of the crock and took a sharp knife and a fork and shredded the meat (right in the crockpot). I then added some leftover bottled BBQ sauce I had in the refrigerator (Bulleye Chipotle). Wasn't enough so then I 'cleaned out' the refrigerator, so to speak, I added some catsup, some yellow mustard, some soy sauce, some tabasco sauce; then I seasoned it with garlic powder, salt, pepper and white sugar (I usually use brown sugar in BBQ sauce but didn't have any). I stirred it all up, tasted it, added a bit more of this and that and adjusted the consistency of it by adding more catsup and a little bit of the juices/broth and let it cook on LOW for about 2 more hours. Yummy-yummy-yummy.
