    Something Mexican-inspired that will also use up some leftover black beans. I'll probably do homemade refried beans and use them as filling for enchiladas, with salad on the side.

    ~I shuffled around all my meals this week and the meals I had left on my plan sound like too much work for me today. So we're having bean burritos instead of the planned meal. Nice and quick.~
