chick peas stewed a with can of crushed tomatoes, a lot of oregano, garlic sauteed in olive oil, and then sprinkled with parmesan.
11% gross to retirement
10% takehome to tithe and offerings
emergency fund maintained at 3000(works for me)
credit card debt 7500
mortgage free
freedom accounts/sinking funds that ebb and flow
then live on the rest!
i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

Breaded Sirloin
2 eggs
1/2 cup milk
1 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper
2 pounds beef top sirloin steak (1-1/2 inches thick), cut into eight pieces
1/4 cup vegetable oil
4 medium ripe tomatoes, sliced
8 slices part-skim mozzarella cheese
In a shallow bowl, whisk the eggs and milk. In another shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, garlic, salt and pepper. Dip steak in egg mixture, then roll in crumb mixture.
In a large skillet over medium-high heat, cook steaks in oil in batches for 2-3 minutes on each side or until meat is no longer pink. Drain on paper towels.
Transfer to an ungreased baking sheet. Top beef with tomato and cheese slices. Broil 4-6 in. from the heat for 1-2 minutes or until cheese is melted. 8 servings.

vegetable soup and cornbread. I know, it's kind of a fall/winter dinner, but it's so dark and stormy here, I think it'll taste good. Plus, I can put it in the crockpot! Have a good day, everyone!

We are having leftover enchiladas. I made 18 for mother's day lunch and we had about 7 cheese and 2 cheese-less left over...so that's what we're having.
