What recipe do you use for your veggie Lasagna?

I make it pretty much the same as one with meat, only I omit the meat and use all the veggies I can put in there and that we like.We have red and green peppers, onions, mushrooms, diced tomatoes and I try to sneak in broccoli. I do add a little extra cheese so it has a meatier feel for DH. I don't cook the noodles beforehand, I just put sauce down, then noodles with veggies and cheese and layer it up. Cover with foil and cook.It is good, but if you use too many tomatoes it can be kinda runny.LOL At least I think that's what does it.

So you don't pre-cook the veggies before going in the oven?

Nope, I just put them in there and they steam cook and are tender.
