What's for Dinner, First day of 2011!
Happy New Year!!!!!
How is everyone this morning? We had a quiet one and then headed downt he beach for fireworks at midnight.

center cut pork loin - roasted in my new lecrueset ....
kraut (spicy)
garlic mashed potatoes
green beans w/ bacon and mushrooms
i may make dd wild rice stuffing she likes...smiles...
garlic bread
lots of apps in the afternoon before dinner...brie, and much else.

One of my own summer free-range chickens is defrosting now! Tomorrow it will be slow- roasted. I'll make butternut squash, stuffing, spinach, and roasted purple potatoes to go along with it.

First day of frugalness for us so we are hitting the frezzer for dinner.
I think I can pull together some frozen chicken fillets and crumb them, some roasted honey adn seasame carrots and some steamed veg.

I can't roast chicken in summer (no central AC lol!) But come the freezing weather, I am so happy to have a healthy, organic meal for my family. I am very grateful that they help sustain us through winter.
