    Albondigas soup

    Corn bread

    Saffron rice

    Plain chopped romaine lettuce salad

    Sober Sangria, lots of lemons, lime juice, strawberries, black raspberries & blueberries.

    Lemon/lime cake with coconut cream cheese & sour cream frosting.

    Sure Molemommy,

    I posted it for the ladies on the SI thread so I just copied and pasted what I wrote there. This batch must have turned out super good because my oldest said it was all my DH could talk about on the way home from picking him up at work.


    Albondigas soup

    1 pound ground turkey
    3 carrots
    4 large potatoes
    about 3 cups chunky salsa
    4 packets sazon
    flavored bread crumbs
    2 eggs
    1 big chicken bouillon cube
    1/2 to 1 cup vegetable oil
    cayenne pepper
    garlic salt
    water

    In a half kettle put the big bouillon cube, carrots sliced into coins, potatoes in small cubes (not tiny cubes). Place mini meatballs in one layer over top of the potatoes and carrots. Pour salsa over top. Sprinkle 2 sazon packets over top, then fill with water just to cover. add oil, and season highly with cayenne pepper and a bit of garlic salt. Cover and bring to boil, turn down to simmer and cook till potatoes are very soft. At this point, and this is important for the flavors to marry, let sit on stove the rest of the day. Right before supper, keep covered and let simmer till heated through.

    In each bowl put saffron rice, then ladle soup over top. Added * I make saffron rice for this, you could buy a box of yellow rice mix if you wish, or you could leave out the rice completely.

    Meatballs

    in large bowl put ground turkey, 2 packets sazon, and two eggs. At this point you'll start to add seasoned bread crumbs. You want the mixture to double to almost double and a half in size. It is to be thick with bread crumbs. Mix VERY well. Make tiny meatballs, wetting hands as you go along.

    This may sound odd, but it is crazy good. There are many versions of Mexican meatball soup, some add corn, but according to my friend who is Mexican, he says my version is just like his Mothers.

    You are both very welcome. I guess I should tell you that I also do this with beef, it kind of slipped my mind since I've been doing this with poultry since beef has gotten so expensive. This recipe is so easy to bend to your own interpretation. But keep the basics the same and you'll find you've got a great bowl of soup.

    HappyMama, I'm betting that if you took a look at the ingredients on the Sazon packets you'll find a way to make up the spice/flavor mix naturally.

    I'd like to see you menu too HappyMama! I like to be inspired to try new dishes, and it's even better to me if it's something I've never heard of or tried before. You've got that market cornered on the FV! Your recipes are the bomb!
