I used this recipe here:
The Taco Stack | Macheesmo
But please be careful with the amounts of the cayenne & red pepper flakes...I LOVE spicy foods but even the amounts he used was too spicy for me.
The changes I made were~
1/2 tsp. regular cumin (I don't keep cumin seeds on hand)
3/4 tsp. red pepper flakes
1/8 tsp. cayenne pepper
all the rest I keep the same amounts. I've made it without the tomatoes & it was good but I've also made it with a small can of Mexican salsa, I think I prefer it with the salsa.
Oh & garlic powder can be used in place of fresh garlic too. I love recipes like this that can be altered to suit our tastes.Michelle in middle Tennessee!
Ever so slowly rebuilding my stockpile...
