Sloppy joes with ground turkey and fries from potatoes and not the bag. I LOVE premade frozen fries but alas I am out of them at the moment.

I've got hubby slaving away in the kitchen making Turkey Soup (meat & broth were frozen after Thanksgiving) and some kind of bread.

tonight it was a hodgepodge...
turkey burgers that were given to us....sliced tomatoes, macaroni and cheese and a pumpkin pie that was also given to us.....

Ok I had nothing to "fix" and wasn't in the mood to cook a big meal. It was either scrounge something from what I had available or go spend money. Trying desperately to remain frugal, I scrounged. Here's what I came up with.
Sauteed onion, red pepper and a jalepeno in oil.
Added cumin, cayenne, garlic powder, lime juice 1/2 can frozen tomatoes, can of black beans, frozen brown rice, cilantro. Heated through and served with a spoon of sour cream.
Only thing I had to open was the beans and a new onion. Otherwise everything was already open/left over.
It was ok. Nothing to write home about but I didn't spend any money. Finished if off with a dish of homemade applesauce.

I made a very good tasting soup from some homemade chicken broth, onion, carrot, celery, 1 oz chicken, and Italian sausage burcelli?, little pasta purses and rice pudding. Next time I will leave the chicken out of it, there was plenty of meat in the pasta.

We had potatoes peppers onions and eggs on italian bread and a antipasta made from all the leftover olives artichokes etc from christmas Cleaning out the fridge and being frugal it was delish

We were being frugal as well eating from our pantry....dad's version of KD using penne and hotdogs (no buns) Fruit for dessert.
THEN we got word that a friend was coming to visit overnight so DH & I ate a tiny portion of dinner and held out for Pizza Hut which we ate later on in the evening, watching movies and enjoying the company of our guest. Did we *need* to order Pizza Hut, no but since our friend isn't able to eat out often - it was totally worth the splurge.
I think for future occasions like these, I'm going to keep something premade in the freezer that doesn't take too long to thaw and throw together - meatballs, sauces, soups/stew frozen etc.2012: The Year Of The Purge!
