Chicken quesadillas.
Husband is starting to appreciate my growing couponing skillz and understands that I need a lot of lead time on things he wants to add to the shopping list. Last week he asked me to look for a deal on canned chicken so we could have quesadillas.
This week I pulled two whole chicken breasts out of the freezer and served baked chicken breast with baked potatoes and steamed grean beans. I cut and picked all the remaining meat off the bones and put it in the fridge. Tonight is chicken quesadillas. This weekend we are having chicken salad sandwiches.

Nobody is here tonight except for me. I've been craving some garlic toast and I think that's what I'm going to eat.
