Just decided--I bought several dented cans of enchilada sauce cheap, so I'm going to mix one of them with ground turkey and whole wheat macaroni and add some shredded cheese. HM Enchilada-flavored Hamburger Helper.

Turned out pretty good, but the can wasn't kidding--HOT! The cheese and some sour cream cut the spiciness some.

Well, I was going to make pizza, but I was up all night working and my DH had to go to work at 4pm. So no time for pizza.
My DH ended up eating leftover beef stew and I had popcorn and leftover banana pancakes.
