Bunny Cake

My mother made these. I love them so much I try to make one every year. This year I made two small ones. To make one: Bake 2 layers of cake in round pans. Allow to cool. cut one layer in half. frost one side, attach other half to it. Stand it up cut side down on an iced plate. take the other cake round and do something similar to make a head and some ears (or use construction paper or cardboard for ears). Frost the cake, add coconut for the hair. If you have dye, you can dye some coconut green and put it around bunny for grass. Jelly beans or other candy for eyes and nose. Marshmallows or frosted shredded wheat for the tail and feet. We used colored toothpicks for the whiskers! We kept the one that looked more like a rat. The in-laws loved the one we gave them (devils food inside and vanilla frosting outside, and left the ears unfrosted for contrast).
