Day 2 sourdough starter
Ok, I have to admit, I was peeking at this all day. Early this morning I noticed that the sides were drying up around the bowl. I decided I better use a damp paper towel. (little trial and error here) So, I added a damp papertowel and a dry one on top of the damp one) I didn't rubberband or secure it down. It's simply tossed on top.

Then later in the afternoon after several peeks, I noticed some bubbles! Hurray, this is good news. This means "something" is going on. Might be mold, might be yeast. LOL We'll see.

Anyway, so I lifted the papertowels off and just gave the starter a quick mix with the wooden spoon. The starter has thickened, but is still about pancake batter consistency. Definitely a bit thicker than when I started though. All is looking as it should at this point. I placed the papertowels back on and placed it back on the counter

 

Day 2
Added a damp papertowel vs. the dry, uncovered later, mixed with wooden spoon, recovered and set back onto counter.
