What is Fermentation?

Fermentation is the process through which carbohydrates are converted into alcohols or acids. The process of fermentation is generally facilitated by certain types of bacteria, yeast, or both and it takes place in anaerobic conditions (no oxygen).

Fermentation is the process that turns grapes into wine and grains into beer – it is also one of the most popular methods of food preservation. By fermenting certain foods you can greatly increase the shelf-life, making those foods the perfect addition to your home pantry.

Benefits of Fermented Foods

One of the main benefits of fermented foods is that they have a much longer shelf-life than fresh foods. Most of the benefits associated with fermentation, however, have to do with the nutritional content of the foods. Fermenting foods can actually increase the nutrient content of the food.

For example, fermenting foods using beneficial bacteria increase the probiotic content of the food and probiotics play an important role in improving and maintaining digestive health.

Tips for Fermenting Foods at Home

If you want to give fermentation a try for yourself you will need a few simple supplies. For one thing, you will need an airtight container in which to ferment your foods – a large glass jar is a great option. Next, you will need the ingredients you are planning to ferment.

Vegetables are the most popular foods for fermentation, though you can ferment fruits, dairy products, beverages, and even some meats. In order to facilitate the process of fermentation, you’ll need to create an anaerobic environment in your fermentation container by filling the container with liquid and by sealing it with a lid.

There are three types of fermentation. Lactic acid fermentation, or lacto-fermentation, is facilitated by yeast or bacteria, turning starches and sugars into lactic acid. Ethyl alcohol fermentation is facilitated by microorganisms that convert carbohydrate into alcohol.

Acetic fermentation occurs when alcohol is exposed to air and then converts into acetic acid. The liquid you use to fill your fermentation container is very important and it determines the type of fermentation that will occur. In most cases, fermentation requires the use of liquid whey or a saltwater brine.

In order to ferment your chosen foods, you simply place the prepared ingredients in the jar or fermentation container. Then, you pack them down to release their natural juices and add enough brine or whey to fill the jar most of the way to the top.

Finally, seal the jar with the lid and allow it to rest at room temperature for several days. Over the next few days, yeast and bacteria will start to break down the carbohydrates and sugars in the ingredients, converting them into alcohol or acid – the result will be your fermented food. Once the food has fermented to the desired level you can store it in the refrigerator or in your pantry.
