3 Spring Recipes Your Kids Will Love

1. Chocolate Covered Banana Pops

Ingredients:

  • 4 medium bananas, ripe
  • 8 wooden popsicle sticks
  • 6 ounces semi-sweet chocolate
  • ¼ cup chopped peanuts

Instructions:

  1. Peel the bananas and cut them in half then insert a popsicle stick into each.
  2. Place the bananas on a plate and freeze for 2 to 3 hours until firm.
  3. Melt the chocolate in a double boiler then stir smooth.
  4. Dip the bananas in the melted chocolate then sprinkle with peanuts.
  5. Place the bananas on a parchment-lined tray and serve when the chocolate hardens.

2. Stuffed Zucchini Boats

These stuffed zucchini boats are quick and easy to prepare. Filled with fresh veggies, they are super-healthy but your kids will have so much fun making them they won’t even realize it.

Ingredients:

  • 4 medium zucchini, halved
  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • 2 cloves minced garlic
  • 2 cups frozen corn, thawed
  • 1 medium tomato, diced
  • 2 tablespoons fresh chopped cilantro
  • Salt and pepper
  • Bacon bits, to serve

Instructions:

  1. Bring a pot of salted water to boil then add the zucchini and boil for 3 minutes.
  2. Remove the zucchini and let cool then scoop out the insides, chopping the flesh you remove.
  3. Heat the oil in a medium skillet over medium-high heat.
  4. Add the chopped zucchini, onion, and garlic then sauté for 3 minutes.
  5. Stir in the corn, tomato, and cilantro then season with salt and pepper.
  6. Sauté for 5 minutes then spoon the mixture into the zucchini boats.
  7. Sprinkle with bacon bits and serve warm.

3. Strawberry French Toast Kebabs

Spring is the perfect time to enjoy fresh berries and these strawberry French toast kebabs are a guaranteed hit. Your child will love making the French toast and then transforming it into a new recipe.

Ingredients:

  • 8 slices bread (1-inch thick)
  • ½ cup almond butter
  • ½ cup strawberry jam
  • 1 cup strawberries, thinly sliced
  • 1 teaspoon ground cinnamon
  • 1 cup milk (your choice)
  • 7 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons butter
  • Maple syrup, as needed

Instructions:

  1. Spread the almond butter over 4 slices of bread and the jam on the other 4.
  2. Layer the sliced strawberries over the jam and sprinkle with cinnamon.
  3. Top the strawberries with the almond butter slices to make 4 sandwiches.
  4. Whisk together the milk, eggs, and vanilla in a shallow dish and add the sandwiches.
  5. Press the sandwiches down and turn to saturate fully with the liquid.
  6. Melt the butter in a large skillet over medium heat.
  7. Cook the sandwiches in batches until golden brown on both sides.
  8. Remove the sandwiches to a cutting board and brush with maple syrup then cut into squares.
  9. Thread the squares onto skewers and serve with extra maple syrup.
