I would like to learn too. My mom makes the best pies in the world, but she doesn't use a recipe, so she can't really tell me how to make one. Sorry I can't be of more help to you.

~I think my apple pie is pretty darn good. Crust is from Better Homes and Gardens.
    Crust:
    2/3 cup shortening
    2 cups flour
(I add 1/8 tsp salt also)
    8 Tablepoons cold water
~Cut shortening into flour and salt until pea sized. Add water and mix. It will look a little crumbly. Knead 2 or 3 times by hand and rest 5 minutes. Divide into 2 parts for top and bottom crusts.
    For Filling:
10 Mcintosh apples(about 2.5 lbs) peeled cored and sliced
    3/4 tsp cinnamon
    1 cup sugar
    1/3 cup flour
~Mix dry ingredients and add to apples. Coat apples well.
~Roll crusts and assemble pie. Poke a few slits in top crust.Bake at 375 for 50 minutes.

Pie making is practice practice and more practice. Good luck!~
