    I have always used Stiver's Best cornmeal and the one store in town that carried it has gone out of business. What kind of cornmeal do you use? Do you have a good cornbread recipe to share? TIA!

    Here's my recipe for good ol' southern corn bread Tis best when done in a HOT cast iron skillet(heat the skillet with the oil inside in the oven). Enjoy! mmMM

    Ingredients:

    1 1/2 c. corn meal
    1 1/2 c. flour
    1 egg
    1 tsp salt
    1 to 1 1/2 tsp sugar
    1 c. milk
    1/2 c. water

    Mix all, may adjust amount of water added as needed, should be pourable but not runny.
    Oil cast iron pan well, best if the pan is preheated and bake at 400 for 20-25 minutes.

    I'm not sure what brand of cornmeal I have--tis in a large ziploc bag now, so the original bag is long gone~shrug~

    Thanks, freerangers, I do always make mine in a cast iron skillet, oiled and preheated.

    I buy whatever cornmeal mix is on sale. The easiest, tastiest recipe is for every 1 cup cornmeal mix, use 1 egg and enough buttermilk for the right consistency. 6 inch skillet, 1 cup cornmeal mix, 1 egg. 12 inch skillet takes 2 cups and 2 eggs. (cornmeal mix and corn-bread mix are 2 different thangs)

    Even my Mama couldn't taste any difference between using cornmeal mix or using cornmeal, flour and all the rest.

    I always shred an apple or two and omit the sugar, just to make them more moist.
