Ruby's Banana Rolled-Oat Muffins

Recipe Description

These are like mini banana breads. This recipe is from Muffins and Quick Breads with Schmecks Appeal by Edna Staebler

~1 c. mashed banana (2 or 3 bananas)

~1/2 c. milk

~1/2 c. rolled oats

~1 c. flour

~1/2 c. sugar

~1 T. baking powder

~1/2 tsp. baking soda

~1/2 tsp. salt

~1/2 tsp. cinnamon

~1/4 tsp. nutmeg (I left this out...we're not big nutmeg fans)

~1/3 c. melted shortening or oil

~1 egg

~1 tsp. vanilla extract

Serves:

12 muffins

Directions:

Smash the bananas until they are liquified. Add the milk & rolled oats (I used quick cooking oats). Let stand while you sift the dry ingredients into a bowl. Blend the shortening (or oil--I used Smart Balance vegetable oil), egg, and vanilla with the rolled-oat mixture. Pour it into the dry ingredients. Stir just enough to moisten all the flour. Fill 12 greased muffin cups, and bake at 375º for about 20 minutes.
