    Default Bananas

    This morning I bought a whole box of bananas for $2.00. They weren't even overripe. The kids have just been eating them straight out of the box and I also treated everyone to a big "Nana Puddin" The kind with vanilla pudding, nilla wafers and bananas.

    Any one have any other great recipes for the other 15 pounds?

    Poor Ellise, the village chef may not see this thread, as she is out of commission. Hope your better soon good buddy!

    Please Do !!! How do you freeze them, do you have to cook them first?

    Robin, HI! So sorry I haven't been on much.

    Peel the banana and put in a ziplock bag, and freeze whole! Great for breads, smoothies,pies etc... I wouldn't advise eating them from the bag as they tend to have a bite to them.

    I'll see what I can find in my file for more Bananas. Oh look in the cookbook I posted Banana Ravioli when I first joined. It is really good!

    I love banana pudding too! Yummy!

    My kids love bananas, I wish I would come across some that cheap for a box.

    Heh Robin, yell at Sara. I remember a while back that she bought all those bananas. There may already be some recipes for bananas posted!!

    If you have a dehydrator you could make banana chips; or how about Crunchy Top Banana Cake.

    2 cups flour
    1-1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1-1/2 cups sugar
    1/2 cup marg.
    1/4 cup buttermilk or sour milk
    1 cup mashed bananas (3-4 bananas)
    2 eggs
    1 tsp vanilla
    1/4 cup buttermilk or sour milk
    Topping:
    1/3 cup marg
    3/4 cup lightly packed brown sugar
    3 tbsp light cream
    1 cup flaked coconut
    3/4 cup chopped nuts, optional

    Cake: Combine flour, baking powder, baking soda and salt in large mixer bowl. Add sugar, marg, first 1/4 cup buttermilk or sour milk, and bananas. Beat at medium speed for 2 minutes. Add eggs, vanilla and second 1/4 cup buttermilk. Beat at medium speed for 1 minute. Spread batter evenly in greased 13 x 9 " cake pan. Bake at 350 for 30-40 minutes or until toothpick inserted in centre comes out clean.

    Topping: While cake is baking, prepare topping. Melt marg in small sucepan. Stir in remaiing ingredients thoroughly. Remove cake from oven and immediately spread topping evenly over hot cake. Broil 6" below element for 2-3 minutes or untill bubbly and golden.
