    Banana Pandowdy

    3 ripe bananas -- peeled, sliced
    1/4 cup dark brown sugar
    1/4 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon salt
    juice of 1/1 lemon

    **Shortcake Dough**

    2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 Tablespoon soft butter
    3/4 cup milk

    In a mixing bowl, toss together the banana slices & seasonings.

    Arrange the banana mixture in a lightly buttered 1 1/2 or 2 quart baking dish.

    Cover the bananas with shortcake dough, and bake the pandowdy, uncovered at 350 degrees for 1 hour, or until the crust is delicately browned.

    Cobblers & pandowdies may be made with various fresh, frozen, canned or stewed dried fruits. Frozen, canned & stewed dried fruit should be thoroughly drained.
    If the fruit is soft, you may omit cooking the fruit for 20 minutes. Serve the dessert with heavy or whipped cream, with ice
    cream or with Custard or Lemon Sauce.


    In a mixing bowl, sift together the flour, baking powder,
    salt & sugar. With a fork, work the butter into the flour mixture. Add the milk a little at a time to make a soft dough. Turn it onto a floured board & roll it out about 1/2 inch thick. Cut it into 4 inch rounds, arrange them on a lightly buttered cookie sheet, and bake them at 425 degrees for 12 minutes, or until they are golden.
    The biscuits may be frozen if protected in moisture-proof wrap. Thaw them fully before unwrapping them; heat them gently in foil just before using them.
