Frosted Banana Bars
Had some bananas set aside for banana bread but decided to make one batch of banana bread and one batch of these bars. They made a huge batch with just 3 bananas. They are nice and firm like a snacking cake and even with a thin frosting are not too sweet. Would be excellent for lunches.
FROSTED BANANA BARS
1/2 C. butter or margarine, softened
2 C. sugar
3 eggs
1 1/2 C. mashed, ripe bananas (about 3 medium)
1 tsp. vanilla extract
2 C. all-purpose flour
1 tsp. baking soda
pinch of salt
Cream cheese or vanilla frosting (homemade or 1-2 containers store bought,
depending on how thick you want the frosting)
chopped nuts (for garnish if desired)
Cream butter and sugar. Beat in eggs, bananas and vanilla. combine flour, salt, and baking soda. Add to creamed mixture and beat well. Pour into a greased 15x10x1-inch or 2 - 5x9-inch baking pan(s). Bake at 350ºF for 25 minutes, or until bars test done. Cool. Frost with cream cheese or vanilla frosting.

Just wanted to thank you for posting this recipe. I made them this morning and they were a hit at my house, too. I didn't even get the frosting on them!! Thanks a bunch!!

I just wanted to say that I brought these to our 4th of July picnic. Because of the frosting I made them into cupcakes. I put a long nosed (I am not sure what the real name for it is) star tip into a ziplock bag and injected the frosting into the cupcakes while they were warm. People loved them and I did not have a single cupcake to bring home.

I made the banana bars today, frosted them with cream cheese icing (recipe below) and since it was very, very hot, I popped them in the fridge. We had them as dessert after dinner and they are very, very good! A big hit all around at my house! Everybody pointed out that they'll be good for breakfast too.LOL

The cream cheese frosting I made was just the right amount for a thin layer and added a wonderful flavor combination .
Cream Cheese Frosting
8 ounces cream cheese, room temperature
1/2 cup margarine, room temperature
2 cups powdered sugar
1 tsp vanilla extract
Mix all ingredients until spreading consistency. I had to add a little more powdered sugar to get it just right.

I doubled the recipe and even though it almost overflowed my mixer and took an extra 10 mintuies.....I have 2 9X13 pans!
mmmmmm soo good!
I frosted them with a plain ol white frosting with the dregs of a cream cheese container (bout a 1/4cup) and lip smacking!
froze one pan for later.
