brazilian black bean soup
brazilian black bean soup (adapted from francis moore lappe Diet for a small planet)
this recipe is just an excuse to eat roasted garlic.
sometimes when i make this i hold off on adding the caramelized onions and garlic, and orange juice until right before serving so as to not lose the aromatics.
what makes this soup amazing is the cross between the toasty burned garlic and the orange juice. yum. you can roast the garlic in olive oil in the oven as well and use whole lot of whole cloves. ummmm.
cooked black beans wth the juice (canned ok)
olive oil
onions , celery, carrots, sauteed in the olive oil
large diced peeled sweet potato or yam (good use for leftover)(can of "sugary sam yams" works too)
a LOT of crushed garlic
green pepper, diced (optional)
bay leaf
pepper
soy sauce (tamari is better)
tomato paste
large can of frozen orange juice concentrate
cilantro for garnish
in olive oil, saute onions until brown (like fajita onions) saute garlic until it gets that "almost burned" look. make sure all the caramelized fond gets into the beans. (deglaze the pan)
add rest of veg, bay leaves, tomato paste, and beans to the crock pot. cook a while, add soy sauce (makes the soup rich and brown)and orange juice concentrate to taste. i like a lot. cook to blend seasoning. serve with raw cilantro on top. sometimes need to use a stick blender.Last edited by ladykemma2; 09-01-2008 at 03:54 PM.

Just curious - what are the amounts needed of each ingredient and cooking times/levels?
Sounds very interesting and tasty but can't make it w/o the quantities.

i used
1 pack dried cooked black beans wth the juice
olive oil
onions , celery, carrots, sauteed in the olive oil
large diced peeled mashed sweet potato or yam (good use for leftover)(can of "sugary sam yams" works too)
8-10 cloves crushed garlic a LOT of crushed garlic
green pepper, diced (optional)
bay leaf
pepper
1/2 cup or more soy sauce (tamari is better)
i used rotel tomatoes 1 can this time
large can of frozen orange juice concentrate
cilantro for garnish
cooking times: cooked the black beans in the crockpot for a few hours, mashed them with the stick blender. transferred to pot. added the sauteed veg, sweet potato, spices, soy sauce, cooked for a while, added the sauteed garlic and orange juice right before serving.
