I sort of made this up the other night since I had just bought a bunch of ground round on sale. Turned out really, really good and made a bunch so I thought I would post for any interested.
I used:
1. About a pound of ground round (ground beef would be fine.) Browned and drained it.
2. Sauteed a chopped medium onion in just a little oil until soft and almost brown. Added an 8 oz. can of tomato sauce, about 1/2 can water, S&P, dash of garlic powder. Simmered on low heat until it thickened.
3. While doing above, I cooked/drained a pack of elbow macaroni al dente and hand grated an 8 oz block of medium cheddar cheese. Drain the mac completely.
4. When tomato gravy got sort of thick, I added the drained beef.
5. Mac in big casserole, dumped the tomato stuff in and mixed it around.
6. Take pinches of grated cheese and sort of poke down in the mac at different places. Then cover top with cheese.
7. Baked about 350 for a few minutes, turned on the broiler until cheese was melted and bubbly.
Add a tossed salad or green veggie, some crusty warm bread and it's a great cheap and inexpensive meal. Made a bunch, too. At least 6 servings.

Ooooo, that sounds good! I love cheese and pasta and could live on both, practically. Unfortunately, I have to limit both quite a bit now.
I bet that would freeze really well, too.

It probably would freeze fairly well...accept I'm eating it. :) For something so quick and easy, it really was tasty.
