I've been playing with my new pressure cooker this week and I am LOVING it! I used to hate to cook chicken because it seemed to take so long to cook and I was usually in a hurry to get something on the table. Today I'm enjoying the sunshine from a distance. As in....out the window, from the sofa, where I'm cooped up with a blankey and a big box of kleenex and the remote control, fighting the latest cold/flu thingy that's making its way around. Not how I'd intended to spend this weekend at all. We should have been in Seattle having a good time, but looking on the bright side I guess we did save money this weekend by staying home
We've been enjoying barbecue pulled pork (courtesy of my successful experiment with the pressure cooker) and cole slaw sandwiches all week. I was on such a roll that night that I also made some oatmeal chocolate chip cookies, and I'm pretty sure the hubby thought he'd died and gone to heaven! Although he wasn't quite sure what to make of the sweet tea...that was a new experience for him.
