Spaghetti sauce with meat

Tonight, I threw together a batch of spaghetti sauce.

I browned 2 lbs of ground beef in a skillet, then added chopped onions (1 lg), 3 celery stalks, half of a large green bell pepper, and about a pound of fresh mushrooms. I cooked it until the beef was browned, then drained the whole batch and dumped it in a cast iron dutch oven. Stuck it in the oven at 400F. Added one can of tomato paste, 1 lg and 1 sm can of tomato sauce, 1 15 oz can of petite diced tomatoes, and 1/2 cup of brown sugar. Seasoned it with salt, pepper, and some dried herbs harvested from my windowsill garden earlier this year.

Cooked it for approximately 1 hour, and now I'm just letting it cool a bit before dumping it into storage containers for future use. Made about 3 qts of sauce total.

Meanwhile, I cooked up some spaghetti noodles and then ran them under cold water to stop them from over-cooking. I am going to make up a few containers of noodles with the sauce for more immediate use.

    That sounds great! I love having stuff like that in the freezer to be able to have for a quick meal!
