Better and better...a little progress each day.
Today's food consumption: one banana and 2 cups of coffee for breakfast, a big bowl of oatmeal with rice milk for lunch, snacked on 1/2 mini-loaf of artisan bread and a mini-carrot while I was chopping up produce for the bunnies, and had a big salad for dinner. Oh, and one cough drop!!
Finished off my 8 glasses of water, did my sit-ups and push-ups, and I managed an hour on the treadmill!! Yes, the hen is back up
Tonight, I made several mini-loaves of artisan bread. I think it was Crazy Homemaker who listed the link. SO easy and SO good! I made 7 loaves (well, 8, but I didn't hear the oven timer on the 8th one, so it burnt).
The basic recipe is 1.5 T of yeast and 1.5 T of salt in 3 cups of warm water. Add 6.5 cups of flour. Mix, then let rise 2 hours. Shape into loaves and set on plate covered with cornmeal, and let rise 40 minutes. Cut a couple of slits in the dough, then bake in 450F oven

I did a little better today, although my eating was a bit lop-sided toward the end of the day.
I started with 2 cups of coffee and an apple. Lunch was a cup of creamy tomato soup. Then I blew it at dinner with spaghetti AND a mini-loaf of HM bread. I was going to just have half of a loaf, which was still about 2 sensible servings, but it was so good, I just kept going. Washed down the antibiotics with a glass of soymilk.

Another week of sickness. At least I found out what is wrong with me: mycoplasma pneumonia (walking pneumonia) and a virus that is causing an inner ear imbalance. I am on a bunch of meds and just waiting it out.

Tonight, I threw together a batch of spaghetti sauce.
I browned 2 lbs of ground beef in a skillet, then added chopped onions (1 lg), 3 celery stalks, half of a large green bell pepper, and about a pound of fresh mushrooms. I cooked it until the beef was browned, then drained the whole batch and dumped it in a cast iron dutch oven. Stuck it in the oven at 400F.
