    Default Strawberry Streusel Muffins

    Strawberry Streusel Muffins


    Recipe Description
    Delicious strawberry muffins for breakfast, snack, or dessert. Wonderful way to use up strawberries from your garden.

    Note: I omitted the nuts in the streusel (my kids wouldn't have eaten the muffins otherwise).

    Also, I used 1/4 c. brown sugar, packed and 1/4 c. granulated sugar for the streusel.
    Preparation Steps:
    Preheat oven to 350º, slice strawberries, melt butter
    Level of Difficulty:
    Easy
    Time Needed:
    10 min prep, 20-25 min baking
    Ingredients:
    Muffins:
    1½ cups flour
    2 teaspoons baking powder
    ¼ teaspoon salt
    ½ cup sugar
    1 egg, beaten
    ½ cup milk
    ½ cup butter, melted
    1¼ teaspoons almond extract
    1 cup sliced fresh strawberries

    Streusel:
    ½ cup sugar
    ½ cup chopped blanched walnuts, toasted
    ¼ cup flour
    2 tablespoons melted butter
    1/8 teaspoon almond extract
    Serves:
    12 muffins
    Directions:
    Combine dry ingredients. Combine moist ingredients and add just until moistened. Fold in berries. Divide among 12 muffin cups. Combine streusel ingredients and sprinkle over. Bake at 350º for 20-25 minutes.

    Mmmmm sounds yummy Chelle, oh and if you want to put a little more fiber in them (instead of the nuts) omit the white sugar (you don't really need it) and add about 1/4 to 1/2 cup of quick oats and about 4 tablespoons of butter to your brown sugar and a little cinnamon if you like, just kind of mix it up together with a fork into crumbles, then sprinkle on top before baking.

    Omit the sugar from the streusel topping? Or the muffin itself?

    No way am I omitting it from the muffin...the strawberries from my garden are too tart for this recipe, and I "need" the sugar

    I'm sorry I kept fixing my um bad typing and forgot to say omit the white sugar from the topping only, not the muffin.

    That's a good looking muffin. Gabe bought a muffin for me last week and it was the absolute worst muffin that I've ever had. I was mad that I didn't just make a batch myself.

    I think the almond extract really makes the recipe, but I'm sure they would be good using vanilla extract instead.

    It's that time of year again. I can't get enough strawberries to make delicious recipes like this one (as well as freeze!) My fil gave us about 2 quarts yesterday from his garden, and our garden is doing great as well.

    I am thinking about making these today, but I'm afraid I'll sabotage my diet. They're irresistible.
