Oatmeal batter bread
Recipe DescriptionThis is a good bread for breakfast or served with soup/stew for lunch or supper. It toasts well. I like to serve it when it is wet or cold outside.Preparation Steps:Grease 2 loaf pans or (2) - 1 quart casseroles.Level of Difficulty:
Preheat oven to 400* F.
Warm milk to between 105* - 115*F.
Melt 1/2 cup butter/margarine.EasyTime Needed:About 1 hr. 20 min.Ingredients:2 packages active yeast or 5 tsps.Serves:
1/2 cup warm water
1 1/2 cups warm milk
1/2 cup granulated sugar
2 tsp. salt
1/2 cup butter or margarine, melted
2 large eggs
4 1/2 cups all purpose flour
1 cup quick cooking oats2 loavesDirections:In a medium bowl, dissolve the yeast in warm water (105 - 115 F).
Add warm milk, sugar, salt, butter, and eggs, mixing well.
In another bowl, mix the flour and oats together well.* (I don't always do this)
Gradually add to the yeast mixture and beat on medium speed until smooth.
Spread 1/2 batter in each of the prepared pans; cover with plastic wrap and allow to rise for 30 minutes.
Place pans in preheated 400 *F oven.
Bake for 25 to 35 minutes or until hollow-sounding when tapped.
