Pumpkin Bread
Pumpkin Bread
Recipe DescriptionPumpkin loafPreparation Steps:butter and flour a loaf panLevel of Difficulty:
preheat oven to 350 degrees
have two bowls availablemoderateTime Needed:about an hour and a halfIngredients:1 & 1/2 cup sugarServes:Directions:
1/2 cup veg. oil
1 egg
1 16 oz can pumpkin
2 & 1/2 cups flour
2 tsp. baking soda1/4 teaspoon cloves
1 tsp cinnamin
1/4 tsp nutmeg
1 cup nuts
1/2 cup raisens or cranberriesIn bowl one mix all the dry ingredients
In bowl two mix all the wet ingredients
mix together and spoon into loaf pan
turn oven to bake and cook until a butterknife inserted in the center comes out clean (aprox: an hour and 10 minutes)
Cooking times vary - start checking at 40 minutes
Can be doubled easily for two loaves. When doing so you can use the 29 oz can of pumpkin instead of 2 16 oz cans and the recipe still works.
Also works well without the nuts, raisens, and/or cranberries.

I made this tonight, but added finely chopped pumpkin seeds and cranberries. I doubled the recipe and am currently baking the second batch of mini-loaves (so 16 so far), with what looks like enough "batter" for a third batch! Tasted one of the first loaves and it was wonderful!

Glad you all are likeing this so far.
The boys like it when I mix some powdered sugar in with cream cheese and let them spread it on the slice like butter.
