    Default Lemon Poppy Seed Bread

    Lemon Poppy Seed Bread


    Recipe Description
    A sweet quick bread makes 2 loaves

    This is a family favorite for years now. Started making it before I was married.
    Preparation Steps:Level of Difficulty:
    Easy
    Time Needed:
    prep time? cook time 1 hour 10 mins
    Ingredients:
    3c flour
    1 1/2 t baking powder
    1/4 t baking soda
    1 1/2 t salt
    2 1/2 c sugar
    1 1/2 T poppy seeds
    1 1/2 c milk
    1 c plus 1t oil
    3 eggs
    1 1/2 t lemon extract
    1 1/2 t vanilla extract
    Serves:Directions:
    Combine/mix all ingredients and bake at 350 degrees for an hour and 10 mins in a greased and floured bread pan.
    t = teaspoon
    T = tablespoon
    C = cup


    Variation:
    I also substitute the lemon extract with the same amount of almond extract . That makes a very yummy poppy seed bread too. ( no lemon flavor)

    Thanks for this recipe. I just whipped it up and have two loaves baking in the oven as I am writing this.

    I'm making banana bread in the AM, and while I have the oven going, I will do a couple of loaves of this. Sounds yummy, and my dh loves lemon-poppy seed bread.

    The bread was good, but mine was a little dry, I think I mixed it too long. I used the almond extract, was out of the lemon. Delicious. Will make again. Thanks again for the recipe.

    Glad you liked it!

    It might have been the mixing to long or maybe your pan/oven doesn't need the extra time.

    I added a lemon glaze on top and it was really good.
