    Spicy Pumpkin Bread

    Recipe Description
    This recipe came from Bon Appetit a long time ago and it is the best pumpkin bread I have ever had. I love it because you can really taste the spices and they just really enhance the flavor of the pumpkin. This bread freezes very well.
    Preparation Steps:Level of Difficulty:
    Time Needed:Ingredients:
    3 cups sugar
    1 cup vegetable oil
    3 large eggs
    1 16-ounce can solid pack pumpkin
    3 cups flour
    1 tsp ground cloves
    1 tsp ground cinnamon
    1 tsp ground nutmeg
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp baking powder
    1 cup coarsely chopped walnuts or pecans, optional
    2 loaves
    Preheat oven to 350°. Butter and flour (or spray with Pam) two 9×5x3-inch loaf pans.

    Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift (or mix with a whisk) flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture in 2 additions. Mix in walnuts or pecans, if desired.

    Divide batter equally between prepared pans. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes.

    Transfer to racks and cool 10 minutes. Using sharp knife, cut around edge of loaves. Turn loaves out onto racks and cool completely

    Looks delicious. All of your baking always looks good! I love pumpkin bread. I haven't made it in a while. I sometimes toss in some chocolate chips.
